I am looking at using this:

Would this work and could I use a touch screen with it? I see that it has serial inputs. It also has usb inputs, I would like to put an ir on it as well.

I dont see a reason why it should not work

You have three option:
1. Use xlobby thin client
2. Use IE and connect to xlobby webserver
3. Connect via RDP
