Default Category Layouts

I have been poking around and unable to find a way to add or alter the Category Layouts (ex: nocover side left, bottom 3). It would be really nice if these could be styled. Forgive me if this is obvious but I am still struggling to wrap my head around the skin development aspect.

Im not sure what you are looking for, but as far as choices on category layouts, what you see is what you get. My skinning document has helped some people maybe it will help you.

Thanks Colby, I have been reading your skinning guide and it's been helpful. It would be nice if it was possible to define your own layout (template) for each category element. This would allow you to define a different font size/type/position for each element of a category list item. Is there any way to group elements?
